My mom calls it a roux (she likes to be fancy); I call it a soup. Either way, it’s yummy and can be used in a hundred different recipes! My family has been making this substitute for a can of cream-of-chicken for as long as I can remember. It’s great to eat plain, over chicken, or in any recipe you have that calls for a can of cream-of-chicken. Did I mention that it is ridiculously easy to make?
What You Will Need:
– a wire whisk
– sauce pan
– 3 Tbs unsalted butter
– 3 Tbs flour
– chicken seasoning–compare to Mrs. Dash
– about 1 cup of chicken broth
In a saucepan, on medium high heat, whisk the butter. Once the butter is melted, add a few shakes of the chicken seasoning. You can always add more at the end. Put in your flour and add the broth, then whisk until the mixture thickens. If you prefer your mixture really thick, add less broth; if you like yours really thin add more broth. This recipe will yield one can of cream-of-chicken soup.
